Capacity - 16 x 1/1gn or 8 x 2/1gn containers - upto 58kg of product
Temperature range of +30/+160'C
External electric smoker in 303 s/steel - removable for cleaning. The smoke is introduced into the cooking chamber via tube and venturi suction system. The smoker burns wood chips.
3 Levels of smoking can be set and the unit allows cold smoking to take place.
Radiant heating - allows gentle cooking and reduces shrinkage by upto 20%
Fitted with 4.5" Touchscreen programmable controls with temperature readout and Password lock function to prevent accidental switching off etc
200 programmes can be stored with upto 9 phases of cooking in each
